关于各种鱼类中的汞含量,网上各式各样的guideline很多,大部分都差不多,像下面这个: http://www.nrdc.org/health/effects/mercury/guide.asp. 我这里想说的是这只是个guideline,具体到不同产地的,甚至不同生产厂家的鱼,很有可能会有偏差.我这么说是由少量的第一手数据推测的.
我工作的地方有个实验室为了提高民众对重金属问题的重视,每年会办一个Open House,就是你提供你有兴趣知道重金属含量的样品,他们帮你测. 有一年我送检了几种鱼和鱼制品(要是不收钱就好了,我还会多送几样),算是第一手数据吧.
Salmon 因富含Omega-3 fatty acids,且汞含量较低,在北美很受欢迎。我以前经常买一种Costco卖的Salmon Burger,包装上说是用野生Alaskan salmon做的,我一直吃的很放心,测过之后再也没有买过。官方数据是94个Salmon样本(FDA 1999-2009) 含汞 0-190ppb (mean:22ppb), 而Costco卖的Salmon Burger测出来是366ppb (已经在NRDC high mercury范围内了!)。
更为可怕的是一种台湾产的鱼松,买鱼松是觉得鱼肉应该比猪肉健康,而且台湾食品质量好吧。结果,测出来含汞1328ppb! 鱼松因为是干的可能会有浓缩效应,即便如此,吃下去也是很可怕的!
由此可见,官方建议低汞可食用的鱼只能作为参考,尽量不要盯着一种吃,多换换风险小一点。如果你附近有能测试的机构,可以考虑把常吃的鱼测一下。
再来说水,因为各个地区水质会相差很多,我就不具体说结果了。我们的Tap water 水质还好,我同时还测了Tap water经过PUR water filter 过滤之后的水。几种检测的重金属经过过滤后确实有所减少,但有的减少很少,最多的只减少到原来的三分之一。奇怪的是锌含量增加了13倍。我推测也许PUR water filter材料里含可溶解的锌。结论就是如果你当地的水质还好,就别浪费钱买water filter了,挺贵的呢。或者买更好一些可以除其他有害物质的.
